On the issue of studying the kinetics of the process of starch adhesion to the working surface of equipment in the production of potato products

The article is devoted to the development of software for managing the process of cleaning the working surface of food equipment from contamination in the process of sorting cut potatoes. The main tasks and problems of selection of operating modes are described, in particular in the calculation of the cycles of operation of the equipment, through which it is necessary to clean the threads of the sorting drum. An algorithm and a software implementation are proposed.
