Quality and safety control of burbot and omul of the Arctic zone of Yakutia

This article discusses the results of a study of the quality and safety of fish samples: burbot and omul of the Arctic zone of Yakutia. The data of organoleptic evaluation, physico-chemical, chemical-toxicological indicators, microbiological and parasitological studies are presented. The results obtained confirm the freshness and safety of samples No. 1, No. 2, and No. 4., sample No. 2 – of questionable freshness.
